What are polyphenols – and why are they important?
Polyphenols (also called phenols) are secondary plant compounds with strong antioxidant properties. They protect our cells from so-called free radicals – unstable molecules that can accelerate aging processes and promote disease. These valuable substances are found in large quantities, especially in extra virgin olive oil – especially oleuropein, tyrosol, and hydroxytyrosol, which are only found in olives.

Numerous studies, including those by the EFSA (European Food Safety Authority), confirm "Consuming olive oil with a high polyphenol content contributes to protecting blood lipids from oxidative stress."

Quality from harvest to bottling:
Immediately after harvest, the olives are taken to the state-of-the-art oil mill, where they are cold-pressed under exclusion of air. The fresh oil is immediately bottled in stainless steel containers to prevent oxidation and preserve freshness.
